Last week Money Supermarket asked me to take part in their ‘Big Night In’ project – to promote staying home as the new alternative to going out. Now given the last time I went out I ended the night with a serious onset of hiccups and sitting in McDonalds bartering for ketchup sachets, this seemed like a sophisticated alternative…
So being given £50 to spend on the night, I felt compelled to be imaginative and original rather than just spend the money on a stack of Dominos pizza (obviously the best way to spend such an amount).
I decided to have my own Spanish night in – since Mr Fashion Nomad returned from living in Spain last year I have massively missed the food (and the sunshine). So now we seem to have the sunshine with us every day, I was inspired to provide the food.
First up on the menu was my favourite Chorizo and Butternut Squash Paella:
Heat oven to 200 degrees.
Heat frying pan and add several lugs of olive oil.
Chop butternut squash (v. small pieces) and cherry tomatoes in halves.
Add squash/tomatoes to baking tray with 3 tbsp of balsamic vinegar/3 tbsp of olive oil/black pepper.
Bake in oven for 30.
Chop chorizo, red pepper, white onion & garlic. Add to the frying pan.
Once they are softened – 10 mins – add risotto rice to the dry pan.
Slowly add chicken stock to pan to soften rice.
Once all absorbed add peas/prawns to cook – 2 mins.
Add cooked tomatoes/squash from the oven.
And a squeeze of lemon.
Also on the menu was Sangria made with Argentinean red wine for that extra Spanish flavour. We could half imagine watching people tango in Buenos Aires. Note – when the meal actually came around it was sweltering hot in the kitchen so we combined wine drinking with some fizzy pop I picked up with some pretty straws. This is a treat for us as we never have fizzy drinks in the house normally!
For dessert we sampled some decidedly less continental cupcakes. But I just could not resist making them after reading the recipes. Chocolate and orange with Terry’s Chocolate Orange buttercream and Gingerbread cupcakes with salted caramel topping…..
Who needs a night out afterall?
